Types of Ice Machines
There are several styles of ice on the commercial market, but we will concentrate on the two most used styles: Cube and Flake.
Cube ice is the most widely used ice in the industry in comparison. It is best for use in soft drinks, beverages on the rocks, Hotel/Hospitality use, as well a use in coolers, etc.
Flaked ice-also known as “crushed ice” is rapidly rising in popularity. This type is commonly used to make seafood displays. This is also great for making many frozen beverage drinks such as smoothies. Other uses include healthcare applications, hospital nursing stations and sports medicine.
Ice Machine Size & Usage
A critically and widely overlooked area is having the correct machine for the application. A little homework on the front end will eliminate the many issues and problems on the back end. Rule of thumb or some starting points are as follows (each application will vary):
Foodservice > Ice Needs Per Day
Restaurant……………………. 1-1/2 lbs. per person
Cocktail…………………………. 3 lbs. per person/seat
Water Glass………………….. 4 oz. per 10 oz. glass
Salad Bar………………………. 30 lbs. per cubic foot
Fast Food……………………… 5 oz. per 7-10 oz. drink
8 oz. per 12-16 oz. drink
12 oz. per 18-24 oz. drink
Healthcare > Ice Needs Per Day
Cafeteria………………………..1 lb. per person
Patient Ice ……………………. 3 lb. per bed
After above calculations are completed, please add 20% to total for spikes and occasional extra usages.
Maintenance
Ice is classified in the category of food, it is imperative to perform regular routine cleaning and maintenance. This will assist in avoiding Health code violations as well as keeping the machines operating at optimum levels and extending the life. Cleaning is recommended to be completed at least once a year (this will vary depending on application, usage and water conditions in your area). Please contact your local authorized service agency to perform these duties.
Water Filtration is another overlooked area in maintenance of Ice Machines. Filters are installed to aid in protecting your investment from harmful buildups. Replacing of Filter cartridges are recommended at least every 6 months.
